Echizen Shio (Japanese Sea Salt Company)

Echizen Shio is a premium Japanese sea salt company from Fukui, prefecture that we source pure sea salt from. Chef Satomi's hometown is on the coast of the Sea of Japan and we have met with the owners and had a hands on look at their facilities on the ocean. We are using their high-grade sea salt in many of our dishes and are developing our own tofu with this premium line of salt.

Kangen Water

One of the secrets to our great flavors comes from the water we use in the preparation of all of our ingredients. We have a large Kangen Water machine on Elmwood where we wash and cook all of the ingredients with this purified water. 

Kangen water is an alkaline water originally developed for use in hospitals in Japan but is now available to the public. There is a lot of negative information out there about this Japanese company because the water business is highly competitive and they have flooded the internet with false information. Regardless, we stand by this delicious ionizing water and believe that it brings out the original chemical-free flavors of the vegetables and other ingredients.

Chef Satomi's hometown of Fukui Prefecture is famous for its delicious rice and clean mountain water, hence there are top notch sake breweries found there also. We work with Ippongi Kubo Honten who makes the Denshin brands here in the US. We carry all of their Denshin line which is a very well-rounded portfolio.

SATO has collaborated with Sweet Jenny's for awhile now to bring you a delicious green tea ice cream and a ginger ice cream on our standard menu. We also have rotating specials using interesting Japanese flavors.

In the past we worked with chef Kotani training in New York City and Buffalo. Master Chef Shuichi Kotani has worked with and developed noodle programs for a variety of highly successful restauarants such as Soba Totto (NY), Michellin-star chef Takashi Yagihashi (Slurping Turtle - Chicago), Jin Ramen (NY), Dassara (NY) among many others. We are proud to have worked with in developing our own unique ramen and soba buckwheat noodles at SATO.
