Buffalo's traditional Japanese chef with modern twists
Having grown up in a successful family-run restaurant in Fukui, Japan, Executive Chef Satomi Sakai Smith brings her Japanese cooking expertise to her namesake SATO in Buffalo, NY. Her father Yoshio Sakai started Ichi-Ryu Ramen in Fukui, and her uncle runs Ichi-Ryu in Shimokitazawa, Tokyo. Satomi grew up in the restaurant business helping her family from a very young age.
She has developed a culinary style of Japanese tradition and creativity that stems from a deep understanding of traditional Japanese flavors. All restaurants feature house-made noodles and original scratch made ramen soups.
SATO is accredited with bringing the first authentic ramen to Western New York. Showing off Chef Satomi's diversity in the kitchen however is the following culinary competition video of her Nickel City Chef 2015 against Buffalo's top chef, Chef Edward Forster of Buffalo Proper.
